The recipes from my one day of fame.....

Some of you have asked for the recipes that were in the newspaper, so here they are.  Enjoy!!!

Chocolate Cake
½ c. shortening
2 eggs
1 t. salt
1/3 c. cocoa
2½ c. flour
2 t. soda
1¾ c. sugar
1 t. vanilla
1 2/3 c. water.
Cream shortening, sugar and eggs together. Mix in rest of ingredients and pour into 9x13 inch cake pan. Bake at 375 degrees for about 30 minutes.

Frosting
2 c. sugar
2/3 c. evaporated milk
Cook until the mixture holds together when dropped into water (approximately 2 to 3 minutes). Take off heat and add 1 c. chocolate chips. Stir until smooth. If too thick, add a few drops of milk.

Sausage & Turkey Casserole
1 pound sausage
½ med. bunch or celery
1 onion (or minced onions to taste)
1 green pepper (optional)
1 pkg. Lipton chicken noodle soup mix
½ c. minute rice uncooked
1 c. turkey or chicken
3 c. boiling water
Brown sausage with onion, celery and green pepper. Add chicken noodle soup mix and rise to boiling water. Mix all ingredients and put into casserole dish. Bake at 350 degrees for 1 hour.

Applesauce Chocolate Chip Cookies
2 eggs
2 c. sugar
1 c. shortening
2 c. applesauce
4 c. flour
1 t. salt
1 t. nutmeg
1 t. cloves
1½ t. cinnamon
2½ t. soda
1 pkg. chocolate chips (I like semi sweet the best in these cookies)
Mix as any cookie dough and drop by teaspoon on cookie sheet. Bake at 375 degrees for approximately 10 minutes.

Enchilada Casserole
2 pounds hamburger
1 med. onion
1 can corn
½ t. rosemary
¼ t. oregano
¼ t. Marjoram
½ t. pepper
2 t. salt
2 8-ounce cans tomato sauce
1 large can enchilada sauce
6 tortillas
½ to ¾ pound cheese
Brown onion and hamburger. All corn, rosemary, oregano, marjoram, salt and pepper, tomato sauce and enchilada sauce. Layer tortillas (which have been torn into pieces), hamburger mixture and cheese. Bake at 375 degrees for about 30 minutes.

Hot punch
1 c. sugar
1 6-ounce can frozen lemonade
1 6-ounce can frozen orange juice
1 t. vanilla
1 t. almond extract
2 c. water
Mix above together and when mixed add 1 quart water and heat.

Foolproof White Chocolate Fudge
2 11 or 12 oz. packages white chocolate chips
1 14-ounce can sweetened condensed milk
Dash of salt
½ to 1 c. nuts
1½ t. vanilla
In heavy saucepan, over low heat, melt chips with sweetened condensed milk and salt. Remove from heat when smooth and stir in vanilla and nuts. Spread evenly into waxed paper lined 8 or 9 inch square pan. Chill until firm.

Frog Eye Salad (easy version)
1 lg. pkg. vanilla Jell-o instant pudding
1 pkg. acini de pepe pasta
2 t. lemon juice
1 large container whipped topping
2 can mandarin oranges with juice
2 cans pineapple tidbits, drained
1 pkg. mini marshmallows
Cook pasta and cool or rinse with cold water. Then mix all ingredients together and chill.
